German text throughout. Photographs on request. Johann Rottenhöfer (1806-1872) was a well-known German chef of the 19th century and the author of an important cookbook. The later steward of the Bavarian kings Maximilian II. And Ludwig II. Was a representative of the upscale "courtly" kitchen. He was "head cook" at the Bavarian royal court in Munich, which means according to the economic Encyclopedia of state, city, household and agriculture, that he - in contrast to the "court cook" - only prepared food for the "master's table", so for the royal family and their guests. In 1858 he published his cookbook Rottenhöfer Instruction in the Fine Art of Cooking, which was used with its 2345 recipes for decades after his death by other chefs..
